筵席格式:烟台传统筵席格式甚多,各具千秋,颇有情趣,如燕菜席,燕翅席,全鱼席、海鲜席、鱼翅席、鸡鸭席等,还有以菜肴的件数命名的:十大碗席、四一六席、四二八席、十全十美席、四平八稳席、步步登高席、五禄奉寿席、伴卓越头席等。
气氛设置:一般餐厅内挂红、挂喜、挂寿等,亦根据不同情况在厅内设置松、竹、梅、兰等高雅植物或陈列字画等艺术品。
席位安排:席位安排是宴会的主要礼节之一般用“八仙桌”或圆桌,主宾位在上首,充分体现了对客人的尊重。
